I was born in Koyoto, one of the most beautiful cities in Japan. My father worked for Toyota in Japan. I was 14 when he got transferred to Seattle, Washington. As a teenager it was hard at first. From food to culture to language, everything was so different than what I was used to. Now at 37 looking back I think it was the best thing that ever happened to me; I get to enjoy the best of both worlds.

We still go back home and enjoy all the GREAT food Japan has to offer.

In this book, I have decided to bring the goodness of the Japanese yakimono into your homes.

Japanese street food is easy to prepare, and with globalization, you can pretty much get any Japanese ingredient at your local specialty store. You may already even have most of the equipment needed.

Japan is famous for a lot of things, like anime, geisha, temples, and Mt. Fuji. However, what gets me really excited about Japan is the food.

As an aspiring food journalist, I believe Japan is a treasure trove of culinary delights. Of course, you know all about sushi and ramen – which are great, don’t get me wrong – but those deserve a different book on their own. For this book, I want to take things to a more informal setting and take you out on the street.

I will impart to you the knowledge and techniques to adapt Japanese recipes to your own home.

Chef Marco Pierre-White says that Mother Nature is the chef, and we are just cooks who bring things together. This is cooking in its most basic form – working with what is there instead of what you want it to be.
