My kids are always on the hunt for snacks after school. These rice krispy rulers are fun and easy to make with just a few simple ingredients.

Rice Krispy Ruler Recipe

Back-to-school season is almost here. If you’re anything like me, you’re always on the hunt for fun, creative, and delicious snack ideas that will make your kiddos smile after a long day of learning. I’m always trying to find the balance of sweet and salty for their after school snacks so they’re satisfied until dinner. I love pairing these rice krispy rulers with these chicken and waffle skewers or adding them onto a snack board.

This after-school snack idea combines a classic favorite, Rice Krispy Treats, with a playful twist. Now you can use pre-made Rice Krispy Treats like I did or you can make them from scratch. The great thing about making them from scratch is you can use healthier ingredients or even make them allergy friendly. Not only are these treats incredibly easy to make, but they’re also perfect for adding a bit of learning to snack time.

Ingredients

• 6 cups of Rice Krispies cereal
• 4 cups of mini marshmallows
• 3 tablespoons of butter
• White or black cookie icing

Instructions

1. Gather all your ingredients and tools. You’ll need a large mixing bowl, a saucepan, a spatula, and a baking dish.
2. In a large saucepan, melt the butter over low heat. Once the butter is melted, add the mini marshmallows. Stir continuously until the marshmallows are completely melted and the mixture is smooth.
3. Remove the saucepan from heat and add the Rice Krispies cereal. Stir until the cereal is evenly coated with the marshmallow mixture.
4. Pour the mixture into a greased baking dish and press it down with a spatula to create an even layer. Let it cool for a few minutes.
5. Once the Rice Krispy Treats have set, remove them from the baking dish and cut them into rectangular shapes, resembling rulers.
6. Using the cookie icing, draw small lines and numbers (optional) along the edges of each rectangular piece to mimic a ruler. Get creative and have fun with it! Your kiddos will love the extra effort.
7. Let the icing set for a few minutes. Then your Rice Krispy Rulers are ready to be enjoyed! Serve them up as an after-school snack, and watch your kids’ faces light up with joy.
